Colony Grill

For pizza so mouth-watering it can compete with even the best of New York or Chicago, try Stamford’s own version at Colony Grill. The local Irish-run tavern is a great go-to spot to casually catch up with old friends, drink a few beers, catch a game and chow down at the town’s long-established pizza place. There should however, be a sign at the door that reads, “Thin-crust Lovers Only,” because that’s the only way they make ‘em and that’s the only version regulars will eat. With a short menu and paper plates, Colony embodies the ‘plain and simple’ approach to food, but this minimalism has worked for the always-crowded restaurant for years.

Popular favorites include sausage pizza and hot oil pizza if you like a little kick to your pie. Of course you can’t go wrong with the classic cheese, which isn’t overly cheesy or saucy, and the crust always has just the right crunch. A family of four can eat three pies, with a few coveted leftover slices, but if you’re getting take-out, know that a 45-minute wait is typical – and worth it - for Colony. If I could only get my hands on the recipe…
